Some Asian ingredients or cuisine specific beverages that are being offered today are Sake to start. This is definitely taking off in the US on many diverse menus. I think Bubble Tea as well as Chai tea is becoming very popular as well. With spicy and seafood, I would say possibly a Riesling or a Chardonnay would work. I wouldn’t suggest a real “Jammy” Cabernet, however a subtle Cabernet with some Braised or smoked meats would be a great pair.
