Eggs were the second fastest-growing segment of specialty foods from 2001-2003, jumping 43.3 percent, according to the NASFT’s State of the Specialty Food Industry Report. And sales may grow even more quickly in the future. According to a study published in the Journal of Nutrition, eating an egg a day may help prevent age-related macular degeneration, the leading cause of vision loss among senior citizens. Low lutein intake contributes to macular degeneration.
