Getting Gnarly with Garlic

Garlic has always held a special place in kitchens. People usually either love it or hate it but most people love it. Through the centuries garlic has enjoyed prominence through not only its connection to delicious meals but also in warding off evil spirits as evidenced by its use for white magic in Europe and also for neutralizing ailments in other cultures. Hindus believe garlic to be something that increases desires. Those familiar with old vampire movies will remember how many times characters in those movies would wear necklaces of garlic or even hang them from the windows in hopes that Dracula would be scared away by what he considered its putrid smell. The movies always featured white garlic, but in Korea a sort of black garlic is created by fermenting garlic at high temperatures.

Nowadays, garlic isn’t really used for magic, instead it has become an even bigger part of everyone’s diet especially after the birth of the healthy dining trend. Lemon Garlic Tilapia

Ingredients

4 tilapia fillets

3 tbsp. fresh lemon juice

1 tbsp. butter, melted

1 clove garlic, finely chopped

1 tsp. dried parsley flakes pepper to taste

Preparation

1. Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.

2. Rinse tilapia fillets under cool water, and pat dry with paper towels.

3. Place fillets in baking dish. Pour lemon juice over fillets, then drizzle butter on top. Sprinkle with garlic, parsley, and pepper.

4. Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes.
